薯蓉青荳焗魚批 Baked Fish Pie

這菜式的亮點除了美味可口,我想就是其方便性。急凍魚柳可能大家都不會太熱衷,處理繁複,吃來沒有味道。但將三文魚柳和鱈魚柳放於牛奶中煮一煮,然後再配合薯蓉,一道充滿了英倫風味的經典菜式就完成了。家人嚐了一口,誰也不知道這魚柳竟然就是之前在冰箱被雪得硬梆梆的

三文魚200g 

鱈魚柳 200g 

日本洋蔥 1個 ,切絲

新薯400-500g 切角 

日本甘筍 1條,切粒

青荳   1/2杯

牛奶  700ml 

橄欖油1 湯匙

無鹽牛油  30g 

麵粉 2湯匙

車打芝士碎 1/2杯

檸檬 半個 

  適量 

蕃茜 適量 

Salmon fillets 200g 

Cod fillets 200g 

Japanese onion , 1 thinly sliced 

Japanese carrot , 1 chopped 

Green peas 1/2 cup 

Full cream milk 700ml 

Olive oil 1 tablespoon 

Unsalted butter 30g 

All purpose flour 2 tablespoons 

Cheddar cheese , 1/2 cup grated 

Lemon 1/2 

Salt , to taste 

Parsley , for garnishing 

三文魚和鱈魚從冰箱取出,直接放入鍋內,加入牛奶用慢火煮至10分鐘

Put the salmon and cod filet directly into the pot without thawing , add milk and simmer for ten minutes over low flame 

將新薯去皮切角 

Peel and cut the potatoes into wedges 

另一鍋內放開水,放入新薯和青荳煮至熟透軟稔。

Heat water in the another pot and cook the new potatoes and peas until soft and tender

把新薯和青荳瀝乾水,加入無鹽牛油後,稍為壓爛備用

Drain the new potatoes and peas , add unsalted butter, and smash them slightly for later use

加入鹽作適量調味

Add salt to taste

在另一煎鍋加入油後把洋蔥用慢火爆炒

In a frying pan, add oil and sauté onions over low heat

加入甘筍和麵粉略爆炒1分鐘

Add carrots and flour and sauté for 1 minute  

加入煮魚柳的牛奶,車打芝士

Add the milk from the poached  fish fillet

and cheddar cheese

然後把魚柳加入在煎鍋中

Then add the fish fillet to the flying pan

擠上適量檸檬汁

Squeeze some lemon juice

均勻將薯泥平均鋪在炒鍋面上

Spread the mashed potatoes evenly on the frying pan

200度焗約15分鐘至表面金黃色即成

Bake at 200degrees for about 15 minutes until the top is golden Brown

加上切碎蕃茜作裝飾

Add chopped parsley for garnishing
