有些時候不想吃太多,又或是想煮一個簡單又窩心的菜式,大家不妨考慮做一碗熱騰騰的烏冬吧!這菜式靈感來自劇集《深夜食堂》,而青椒做法也是非常簡單,用來佐酒一流!
日式青椒 10-12隻 | Japanese green pepper 10-12
日本豉油 2湯匙 | Japanese soya sauce 2 tablespoons
味醂 3湯匙 | Mirin 3 tablespoons
烏冬 (1個)已煮熟 | Cooked udon 1
烏冬水 | Udon water
鰹魚粉 1湯匙 | Dashi powder 1 tablespoon
日本青蔥 1條 | Japanese leek 1
日本豉油 2湯匙 | Japanese soya sauce 2 tablespoons
味醂 1湯匙 | Mirin 1 tablespoon
青檸汁 2湯匙 | Lime juice 2 tablespoons
蘿蔔蓉 2茶匙 | Radish , grated 2 teaspoons
紫菜碎 1茶匙 | Seaweed flakes 1 teaspoon
做法:
先預熱煎鍋,可加略少煮食油,用中火炒約1分鐘,加入豉油及味醂,煮約30秒,完成
Heat up a frying pan or skillet over medium flame , and stir fry green pepper with a dash of cooking oil ( optional ) for about 1 minute. Add soy sauce and mirin and cook for another 30 seconds.
烏冬先煮妥,烏冬水留用
Cooked udon and keep the water for use
加入鰹魚粉 、大蔥頂部、豉油及味醂 ,略煮5-10分鐘,熄火後加青檸汁
Add dashi to the udon water and the top of Japanese leek together with soy and mirin. Simmer for 5-10 minutes and turn off the flame. Add lime juice to the broth.
將熱湯加至烏冬,享用時加蘿蔔蓉及紫菜碎
Pour in hot broth into the udon bowl and top with freshly grated radish and seaweed before serving .
