炸薯餅 Potato Croquette

看卡通片好喜歡看見餐檯上擺滿食物,而亮眼點莫過於那隻大大的燒雞髀。在家抗疫的日子,不論你EQ 值幾高、忍耐能力有多強,我們總會有突然感到煩躁不安和無奈的時候。遇到這時刻,我會將這個炸薯餅做出來,將薯蓉混和雞肉再搓成一個半球狀,然後再加入那支雞骨,將它炸至金黃色,看到這裡我已經心感滿足了。再看見家人和朋友不停為這碟「似髀非髀」打卡,我從內心笑了出來,剛才納悶感一掃而空。

材料:

雞鎚連骨 3-5隻

美國焗薯 , 已熟去皮 1隻

蒜粉 2茶匙

車打芝士 3 湯匙

胡椒粉 1茶匙

雞蛋  2隻 , 打散

麵粉  8 湯匙

日本麵包糠  8 湯匙

做法:

雞鎚用鹽和胡椒粉醃味,大約30分鐘。

隔水將雞蒸熟,並將肉拆開,肉和雞骨待用。

美國焗薯蒸熟後將其壓成薯蓉。

在一湯碗內 ,將雞肉 、芝士、 蒜粉和薯蓉搓成球狀 ,然後分成均等小份 ,再將其包在雞鎚外 ,形成一個雞腿做型 ,放在雪櫃約20-30分鐘 。

從雪櫃取出 ,將薯蓉餅先沾上麵粉 ,再沾上蛋漿,最後沾上麵包糠,然後在熱油中炸至金黃 。

Ingredients:

Chicken drumsticks bone-in    3 – 5

Baked potatoes , peeled and boiled    3 

Garlic powder 2 teaspoons

Cheddar cheese, grated   3 tablespoons

White pepper 1 teaspoon

Whole egg, beaten   2 

Flour     8 tablespoons

Panko powder    8 tablespoons

Method:

Marinate drumsticks with salt and white pepper for 30 minutes. 

Steam chicken until cooked. Remove the meat off the bone, and reserve the shredded meat and bone on a plate for use later. 

Cook potatoes until soft and mashed when it’s hot.

In a large bowl, mix chicken meat, cheese, garlic powder and potatoes into a round dough. Divide the dough evenly into small portions. Wrap the dough around the chicken bone and form into a shape of a chicken drumstick of your preferred size. Chill in the refrigerator for 20 – 30 minutes. 

Coat the drumsticks in the following sequence: flour, beaten egg, panko powder. And deep fried in hot oil until golden brown.
