每逢過時過節,不論是東方或西方家庭,家家戶戶都會吃得好一點。而這個「好一點」對於每個家庭都是帶住不同的定義,就正如「大魚大肉」這句說話對我的解作不只是甚麼鮑參翅肚,又或是到酒店吃一頓盛宴;而是一家人或是一班友人聚在一起吃住一頓「家宴」,暫時把所有的煩憂放下,開開心心的去吃着飲着。喜歡看電視新聞每逢在過時過節前在街市訪問在買餸的閑人甲、乙、丙,我不懂得他們的名字,但他們每個人面上那張掛住了期待和快樂的樣子卻令我念念不忘。
英文有句說話叫 You are what you eat ,而我更相信You are what you cook , and how you cook 的說法。我喜歡為家人、為我喜歡的友人入廚,儘管我在入廚後吃得不是太多,但看見你們把枱上的餸菜一掃而光,這就是最快樂的感覺了!
做菜的又或是來吃飯的要珍惜這個體驗,這種感覺原來是我們每一個人都需要的能量,管它只是一碗餐蛋麵又或是久違了的紅燒肉。今天是新一年的首日,我決定花多一點時間,在廚房做一個平時較少做的Coquilles St Jacques 給家人吃,然後再做一個小時候媽媽給我做的蕃茄飯。嗯,這就是「大氣」啊!
材料:
無鹽牛油 20g | Unsalted butter 20g
乾蔥頭 3個,切丁 | Shallots 3, diced
啡蘑菇 200g , 切丁 | Brown mushrooms 200g, diced
鹽和胡椒 調味 | Salt & pepper, to taste
白葡萄酒 250ml | White wine 250ml
扇貝 9 隻 | Scallops 9
扇貝殼 3 個 | Scallop shells 3
雙重奶油 120ml | Double cream 120ml
蛋黃 1個 | Egg yolk 1
檸檬皮 1茶匙 | Lemon zest 1 teaspoon
新鮮龍蒿 1茶匙 |Fresh tarragon 1 teaspoon
車打芝士 30g , 磨碎 | Cheddar cheese 30g, grated
做法:
在煎鍋中,用中火將乾蔥頭和牛油一起炒至軟。 加入蘑菇、鹽和胡椒粉調味,用中高火炒至金黃色。In a frying pan, saute shallots with butter over medium flame until soft. Add mushrooms, salt and pepper and fry over medium-high flame until golden brown.
加入白葡萄酒,用中細火慢慢煮沸。 然後加入扇貝,煮約2分鐘。Add white wine and simmer to a very gentle boil. Then add scallops and poach for around 2 minutes.
關火,將扇貝放入碗中,並保留煮扇貝的水。 將煮扇貝的醬汁倒回煎鍋中,用中高火煨。 加入雙重奶油燉至液體漸漸減少,醬汁變稠。 將爐火調教為中低以避免煮燶。Turn off the heat, and put the scallops in a bowl. Reserve the poaching sauce with a strainer. Pour the sauce back into the frying pan and simmer in medium-high flame. Add double cream to simmer until the volume reduces and sauce gets thickened. Reduce heat to medium-low to avoid from burning.
熄火後待涼 1 分鐘。 加入原隻蛋黃并快速攪拌。 用少許檸檬皮和新鮮龍蒿草調味 Heat off and cool down for 1 minute. Add egg yolk and whisk quickly. Season to taste with a dash of lemon zest and fresh tarragon.
將蘑菇放入扇貝殼中,並在蘑菇上放 2 至 3 隻扇貝,將醬汁舀在扇貝上,確保它們都被完全覆蓋。 上面撒上磨碎的芝士 To assemble, place mushroom in the scallop shell, followed by 2 to 3 pieces of scallops on top of the mushroom, spoon the sauce on top of the scallops and make sure they are all covered. Top with grated cheese.
將烤爐開至高溫,烤扇貝約 5 到 6 分鐘,直到烤熱並變成褐色為止 Turn on broiler to high, and broil between 5 to 6 minutes until hot and browned.
